This move is never ending! The people helping me to fix up the place I'm moving into had to take the week off. I should be able to move in there within the next month. Meanwhile most of my things are in bins. I can't wait to go! I'm going to use the time to make home cooked freezer meals for myself. When this move and unpacking get underway I won't have time to prepare good meals and I'll surely need them. I'm making chicken parmesan, lamb/bacon/Guiness stew, chicken teriyaki with vegetables, chicken Thai yellow curry w vegetables, chicken stir fry mix, chicken tikki masala, roast beef mashed potatoes and vegetables w garlic butter cream sauce, lasagnas, an assortment of muffins and cookies and cheese danish. I'll be set for a while! Some things are frozen raw to be baked later, some are already cooked for a quick reheat. My pressure cooker makes it quick to do the roast, curry and Indian food. I just basically have to make rice or pasta and heat up dinner each night after this. I did a few freezer meals last week and I've been very happy that everything came out so well. Even my mashed potatoes did well after freezing! You just have to use a ton of butter and heavy cream to make them freeze well. Not a problem! 😋
